Tortilla Soup

So a week or more ago I made the MOST fantastic Tortilla Soup and I was asked to share my recipe and I forgot until today... here it is... this makes enough for my little family (typically 2-4 people)

3 boneless/skinless chicken breasts cooked & cut finely
1/4 medium onion
2 cloves garlic
1 tbsp butter
1 tsp chili powder
1 1/2 tsp ground comino
2 tsp oregano
1 49oz can chicken broth
2 cans Rotel
2 cans corn
2/3 c chopped cilantro
Monterey Jack cheese
crushed tortilla chips
1 or 2 chopped avocado

Saute onion & garlic until soft. Mix broth, Rotel, spices & onion/garlic. Bring to boil. Add chicken & corn. Simmer about 15 minutes. Serve. Top with cilantro, cheese, tortillas & avocados. EAT! YUMMY

SO the last time I made it I didn't have any chili powder & I used some spice I stole from Sherry... "slap yo mama" seasoning. It made the soup superb! AND I don't use the chicken stock from boiling down the chicken because it grosses me out. AND I am sort of a spice dumper so those measurements are a little ify! And if you like less corn & tomatoes ~ just use one can of each. I love corn so it is tasty to me!!
