August 31 ~ 2011 ~ Cupcakes

Sometimes I swear I do the weirdest things. How simple is it to make a bunch of cupcakes when I have a box of cake mix, a container of frosting & cupcake wrappers. Well as simple as it sounds we are NOT a cake eating family. The point in making the cupcakes is that we are celebrating Anders birthday today (he will be home today) and HOMEMADE cupcakes say "I love you this much that I made you a flipping cake". But today I put Espen in the car, drove 25 minutes to a place called Cupcake Island. http://www.cupcakeisland.com/ I've had their creations before & found them to be OUTSTANDING. They are perhaps one of 2 or 3 places in this fantastic place where you can get just cupcakes. They sell little ones and giant ones. All for a price! So we drove up there, chose 6 cupcakes and Espen had a sample (I didn't .. I'm working on my diet! ~ and it was 9:30am). And then we drove home. ONE HOUR. Could I have made the cupcakes in an hour ~ you bet I could have. I have 6 different cupcakes, all beautifully decorated. I couldn't have done that. These purchased cupcakes will say "I love you this much that I drove 1 hour to get them for you with a 2 year old and you better enjoy them!!" So as we enjoy our delish cupcakes tonight I'll wonder if my time was really that well spent... I know for certain I don't have a giant cake or 30 cupcakes sitting here that won't get eaten!!
